I found an Eliza Parsons on the 1881 census.
Dudley Union Workhouse
Eliza Parsons, head, unm, 40, nailor, Dudley
James, son, 8, Kingswinford
Sarah, daur, 7, Kingswinford
No other children were with her that were there on the 1871 census. There is a birth for a James Parsons White a couple of years out from the child with her in the work house?? 1871 Apr-Jun Dudley
I looked for the other children from the 1871 and could only find a possible one in 1881.

There is a possible marriage James Hackett to Jane Rhoden in Jul-Sep 1871 Dudley 6c 98
There is also a possible marriage for a Eliza Rhoden to a William White in Apr-Jun 1862 Dudley St Thomas 208/003/188
Looking for them in earlier census hasn't helped but,
