It is hard to know without any occupations on any records Is there any evidence for Sarah apart from the 1841 census? Any baptisms with her as the mother?

Only way the Census and baptism records would tie up is if John Edwards married 4 times
Mary , Elizabeth, Sarah and Elizabeth
Possible key is John Edwards 5 mths on 1841 Census which could be child of Sarah and John

Ancestry have record showing Sarah Wheeler nee Edwards married a Joseph Wheeler and they emigrated to Australia and when she died her parents are shown on cert. as John Edwards and Mary Edwards ( formerly Twill) and Witness is brother Job Edwards who also emigrated to Australia with wife Harriett Edwards nee Turton

Elizabeth's baptism is the right one I think, since it has John's occupation as wheelwright and it is at Northfield which is where the family was in 1841

I am inclined to think that the Sarah in the 1841 census is simply a mistake and it should be Elizabeth. Unless Elizabeth (mother of John who is 5 months old in the 1841 census) died when he was born and John married Sarah PDQ, and then John was baptised and his mother put as Elizabeth but no deceased next to it. And then Sarah died and John married another Elizabeth before the 1851 census. That seems a bit unlikely to me.
