However, is that baptism really there for their son Joseph - I have baptisms for a number of their children, but not this one (admittedly, I have a gap in the right place between two children) - did I miss one?

I have (all bapt St Thomas, Dudley):
William 28 May 1780
Ann 30 Dec 1781
Joseph 25 Feb 1784 (bur 12 Dec 1787)
Isaac 26 March 1785 (think he m Rebecca Pearson 14 Jan 1805, St Thomas, Dudley - there is a possible bapt for her 1783)
Sarah 8 Jan 1788
Hannah 25 Nov 1792
Elizabeth 8 Feb 1795
Thomas 26 Apr 1801

Just checked using the Hugh Wallis site:
Batch number for St Thomas bapts for that period is C040141, but that Joseph isn't there.
