Hi
You can use it for lots of things but never in huge amounts I suspect.
Yesterday I saw some French tv cook mixi it with whole grain mustard and then make croque monsieur by spreading it on bread, adding grated cheese, ham, more cheese, more bread and then frying in clarified butter (sandwich grill should work).
Or you could put it in mashed potatoes instead of milk and butter or cream, perhaps with chopped parsley?
And you can mix it with mayo and make tuna salad or egg salad for sarnies.
To be honest i am always buying tubs and throwing half of it away. My mother would have a fit! :-)

You aren't going to mash new potatoes are you?
You could do that posh "crushing" and just add it cold I think. Depends if you like warm food.

Found this recipe for you. Perhaps you have tarragon left over too?
