Carrots in Orange

I want to do this but find that I can never taste the Orange

this is what I do any other suggestions to improve pls

Boil carrots in small amount of water
Then when done turn off and add orange juice to mix thru carrots.

I wondered about adding a red onion and whole grain mustard to mix too

It's a possibility but I suspect that the strength of the flavour of the onion and mustard will dominate over the orange. You might try cutting julienne strips of orange peel, blanche them in a couple of changes of water. Then dress the carrots with the fresh orange juice before stirring the strips of peel in.
Or you might try reducing the orange juice by gentle simmering to intensify the flavour.
Also, you used to be able to buy frozen orange juice concentrate which might do the job better than fresh juice.
Currently investigating the Hillmans of Sussex.

I have never done this recipe, but in my book it says toss the carrots in orange juice,butter and brown sugar . After cooking the carrots ,drain return to pan pout a 1/4 cup of orange to 1lb of carrots add 3 tablespoons of brown sugar 2 tablespoon s of butter ,a pinch of salt simmer over a med heat for five mins untill butter and sugar has melted. :-)

I like the idea of concentrate never thought of that

and will try the butter and sugar
