Spicy cashew nuts

Post by gardener »

Just tried this off bbc food

250 g cashew nuts (unsalted)
50 g brown sugar
1 tsp Chinese five spice powder
1/2 - 1 tsp chilli flakes
1/4 tsp salt
1 tbs water

Toast cashew nuts at 200°C for about 8 minutes (watch carefully so they don't burn).
Melt rest of ingredients, tip in nuts and stir. Spread out on baking paper to cool.

Yum! I used the lower amount of chilli, might add more next. And they are quite sweet so a bit more salt might be good.

Eat with a gin and tonic (my favourite at the moment is made by adding strips of lemon zest and a few juniper berries to a bottle of gin, let it sit around for a few weeks and then use as usual only there is no need for the lemon slice and it goes a bit cloudy when you add the tonic).
