Have you noticed the differences between these two entries that di found
Not only does his name change
his job change from 1855 (MC) Puddler to 1861 Horse Nail Maker to 1871 Brewer
but also they have a problem with their ages he only gains 3 years between census and she loses 2!!
I checked the 1861 census and it is these ages are written very clearly and the 1871 ones are in line with the 1881 more or less.
I don't think we can predict his age dob based on these census returns

It's the 1861 that is out of whack with the others. Harriett should have been 27 rather than 37. Think it's an enumerator error on the 61. The children match OK.

It was not unusual for folks to take up brewing. Often it was the wife or an additional occupation for the man of the house. Maybe Hezekiah/Isaiah was incapacitated in some way?
