I think Elizabeth is a needle woman.
John is an engineer's assistant? Ass as an abbreviation but the first s looks like an f.
Then it Ja (s above) which is perhaps short for James

My best guess at least :-)

Thanks gardener, that makes sense - in later life, John Canfield was an engineer, then an engine fitter
