Can't see Stores myself. The third letter seems quite unambiguously an e. 'Deals in Marine Items' for me.

I also think it's Tribe flamboyantly written and agree the 1851 Grocer's Assistant is the same person. Ages were rounded down to the nearest 5 in the 1841 census so 38 would have been rounded down to 35 then a spurious birth year of 1806 backed out. The 1803 birth year in the 1851 census is therefore completely consistent.
