:lol: Annie, moresome isnt it? I do it with just onions too and cold is nice aswell!
Goodness yes leave cheese out if you are allergic but is still as nice! I dont always add it.

This would make a fabulous Starter to the Saddle of Lamb meal. Excuse me not typing it all out, the link is easier and you get the photos.

It's so easy to make but you do need a blender. Slight variation, I use those Knorr Chicken Stock Pot things, I think one makes 3 quarters of a pint and I use two to make the quantity for this recipe. (Not being Vegetarians, we find it gives a richer flavour than Vegetable Stock)

Using frozen peas makes it really simple and fast, although at this time of year and for a dinner party, I have used fresh peas from the allotment but that's just showing off lol.

I prefer the hairy, Apple mint, which has an intense but slightly sweeter flavour than other varieties, personal taste I suppose but we think it is the best mint for using in cooking, especially for mint sauce with lamb. Mint can be very invasive in the garden, so I keep a large crockery pot, growing by the back door, keeps it under control and no trekking down the garden on rain sodden days, like today. :wink:
