Despite my initial grievance at the poor law records not being helpful for me personally, I have found one bit which may be of help:

This Samuel Cupit is in Linford Nottinghamshire and the document is from 1842
In the census returns for 1841 and 1851 I can find a match, but living in Manchester?
Is this purely coincidence? Surely it cant be the right one?

If I've understood timings correctly -- anyone who was in the poor relief system was still being sent back to place of origin at this time.
In 1841 if I've found the same census as you -- Samuel was a dresser -- not sure what that was but by 1851 he appears to be a labourer with a gap in his family where William would have been -- there is a possibility that the family travelled south after the 1841 census -- had a child in Nottinghamshire
possibly this one
William Cupit 1841 Oct-Nov-Dec Leicestershire, Nottinghamshire -
got into financial difficulties and were repatriated to Manchester before having another child and the next census
