Was it common for the the mother-in-law to take the surname of her son-in-law if she moved in with them?

william POVEY born 1853 in berkshire was living in fulham , london on 1901 census with his wife fanny , children and mother-in-law Miriam POVEY??

I don't think it was common, no.

What was Fanny's maiden name?
If she wasn't a Povey too then Miriam's surname could be a mistake, or else she could be William's step-mother perhaps? Or mother in law from previous marriage?

i dont know fanny's maiden name , as far as i know , william wasnt previously married and i am fairly certain williams mother was called hannah - the census shows miriam as last in the household m-in-law age 73 and surname as "do" - meaning ditto

This sometimes happened when the enumerator made assumptions that everyone in the household had the same surname.

Wit, George Finch (I wonder if he is with the church as he is wit. to the next the marriage?) and Mary Hornsey

1901, as Miriam mother to Fanny only, if you search for Povey only Fanny comes up.

Yes thats the family , and as you say the 1901 census has miriam povey as mother-in-law
i cannot find a stephan and fanny lewis on 1871 census though

1861 as a Fanny Lewis born abt 1851 with mother Harriett living in Berkshire, with 2 sisters and a brother.

She is not with her mother in 1871.
