Henry Hillman/Dumbrell 1842 - ?

I have a Henry Hillman, born out of wedlock to Caroline Hillman (FreeBMD has it in the September quarter in Steyning) and baptised 16 Oct 1842 at St James, Ashurst, Sussex.
His mother married John Dumbril in 1843 (FreeBMD has it in the June quarter in Steyning).
In the 1851 census his mother is married to John Dumbrel and Henry appears as Henry Dumbrel but by 1861 he's gone missing.

Can anyone find him for me please?

That's those bothersome Lindfield Dumbrill's, they keep popping up, getting in the way.

Hillman is Sussex' equivalent of Hingley; it's rarer to have a street without one than with one. Interesting that one though, a quick check on the census suggests her husband, a fisherman, made a point of being away on census day. But what's really annoying is that they all called their kids by the same names!!!!! Except Samson of course, but I can hardly find anything about him so he's not really much use as a search target.

Wouldn't be surprised if he spent some time in France if he is a Prof. Of Gastronomy.

Not him I'm afraid, I'd be surprised if my Henry could read and write let alone become a professor of gastronomy. And there's no Aunt Sophia either. Dumbrill's are almost as numbersome as Hillman's. Trust me to come from such common stock.
