Finally got around to looking at Ephrain's military records and got a bit of a surprise.

On the 25th October 1883 he was arrested and placed in a civilian jail awaiting trial.
Turns out he stole 20 heads of cabbage from a Sarah Johnson from Lithfield worth 3 shillings. There are lot of Sarah Johnson market gardeenrs and farmers around Lithfield.
Convicted on the 27th and spent 21 days in jail.
The transcript of the trial is in his military records and he went under the name Edward Hadley.
After rejoining his regiment he was again arrested on the 31st March 1884 on unknown charges.
He was convicted on the 15th April and sentenced to six months.
He returned to the army on the 21st Sepetember 1884 and was immediately shipped off the West Indies and didn't get back to England till March 1890.
I would love to know what his crime was.
I assume it would have been dealt with at Litchfield like his first trial but I do not have access to those records.
