Confusion over a son!

I was contacted about a distant relative of mine from Australia about a marriage

1864 - George Gowler to Elizabeth (ann) Howes
They are both 23 and George is Listed as a Blacksmith.
However, Georges Fathers name is blank.

Looking back through censuses arround 1840, ive found this:

Sarah Gowler 50 abt 1791 Female add Huntingdonshire England
Richard Hayer 25 abt 1816 Male add add add
Eliza Hayer 30 abt 1811 Female add Huntingdonshire England
William Hayer 5 abt 1836 Male add Huntingdonshire England
George Gowler 4 abt 1837 Male add Huntingdonshire England
Thomas Franks 25 abt 1816 Male add Huntingdonshire England

In the notess for George, it says Shoe makers son (crossed out)
For reference, Eliza is Sarahs Daughter.

Now using logic, if Richard was the father of William, then why isnt George called George Hayes and not George Gowler?
The person im speaking to from Australia seems to think that George Gowler is the son of Sarah, but her husband John, dies in 1826.
So I therefore think that George is the son of Eliza before she was married?

In 1851, George Gowler becomes George Hayes ...

any thoughts?

Thanks
Andrew
