Ok we have a winner....! Di's Pie.... :grin:

So we need the recipe Di asap
I am cooking mine this Sat.....yummy..

here are the results


Rob= Paella a la Valencia =13%
Northern Lass=Meditteranean Lamb Cutlets =38%
Di =Mum's Potato, Bacon, Cheese and Paprika Casserole =50%

So that is it for March we are cooking

POTATO, BACON, CHEESE AND PAPRIKA CASSEROLE a la Di's mums recipe

OK, here's the recipe:

My Mum's POTATO, BACON, CHEESE AND PAPRIKA CASSEROLE

5 large baking potatoes (floury rather than waxy)
6 rashers of lean bacon cut in small squares
1 large onion finely chopped
butter
500 grams grated cheddar cheese
2 heaped teaspoons mild paprika
salt and freshly ground black pepper
3/4 pint or 425 ml milk
1/2 pint or 280 ml pouring cream

Reserve about 4 tablespoons of the grated cheese.
Peel potatoes and cut into smallish cubes. Soak cubed potatoes in cold water for 10 mins.
Saute onion and bacon pieces together until onion is lightly browned.
Drain and pat dry potato cubes.
Butter a shallow baking dish generously.
Cover bottom of dish with a layer of potato.
Sprinkle with half the onion and bacon mixture.
Sprinkle with half of the remaining grated cheese.
Season with a sprinkle of paprika, black pepper and salt to taste. (I like a fair bit of paprika)
Repeat the above for another layer.
Cover with the remaining potato; pour in milk and cream to cover, and bake in a hot oven (about 230 Centigrade, 450 Fahrenheit) for 10 minutes.
Reduce oven heat to 175 Centigrade (350 Fahrenheit): sprinkle with remaining cheese and a little more paprika and bake until the potatoes are tender, and the liquid is almost all absorbed- about 2 hours.

You can use this as a side dish to a main meal, but I like to just eat it as a meal in itself.

Good luck. (Goes well with a glass or two of dryish cider.)

Yes, so I like my praties, OK? :lol:

You can halve the quantities if you're only using it as a vegetable dish with something else.

Doesn't really matter what sort of potatoes - just the waxy ones don't absorb the milk & cream so well.

Sorry won't be peeling any spuds, will be eating my Chinese Takeway whilst lounging on my sofa watching a good film, you lot are suckers for punishment :lol: Happy cooking from Linell.

Well as you all know I only cook wholesome meals for my family every night!
No rubbish takeaways in my house!

I love doing this cos it gets me cooking but I always have the number of the chinese takeaway handy just in case it turns out wong!

Well the creation or rather creations x 3 are made with the customary variations-yet to be cooked but all the hard work over with.

I have a garden full of leeks that need to come up so I used boiled leeks for 12 minutes with microwaved Bacon- less fat girls & Rob :grin:
I didn't do squares of bacon because I'm not that tidy so hacked it up a bit into pieces.
Only did a single layer because I was only making smallish meals not a feast for 5000 and one layer seemed enough.
Added some slice tomatoe on top
So dinner tomorrow and 2 for the freezer -plus might make something similar again as only cooked half the picked leeks

Apart from that -just like Di's recipe but not sure about the cooking time for tomorrow as my quantities are quite different- I will probably shove it in until it goes brown in my normal Dehlia style.
