yes we do eat caramel potatoes. What about some vegetarian meatballs (frikadeller), those could be made ahead of time and frozen! There aren't many vegetarians in Denmark so my collegues couldn't really help. I suppose a nut roast sort of thing would be good as well.

Apparently until about the 1950's goose was the norm, then turkeys started being mass produced and became cheaper, and therefore more popular!
We always had turkey at home, and usually my danish in laws have roast duck and roast pork - so the goose is a departure for all if us!
