ANNIE'S EFFORT

Lamb Shank Casserole

2 lamb shanks (if you like a lot then more)
1 large onion coarsely chopped
1 pkt of French onion soup
1 tsp of Worcester sauce
tsp of dried mint

place lamb shank in slow cooker with onions, mix the soup and sauce together with with 3 cups of water and pour over lamb shanks.
Cook on low for about 4 hours or until tender.

Serve with mashed potatoes and veg of your choice and mint sauce.

Do we have to enter a starter and sweet also , I'll think of one if so

Starter Yorkshire Pudding with onion Gravy

Ingredients
3 oz (75 g) plain flour
1 egg
3 fl oz (75 ml) milk
2 fl oz (55 ml) water
2 tablespoons beef dripping or veg oil
salt and freshly milled black pepper

Method
Make up the batter by sifting the flour into a bowl and making a well in the centre. Break the egg into it and beat, gradually incorporating the flour, and then beat in the milk, 2 fl oz (50 ml) water and seasoning (an electric hand whisk will do this in seconds). There is no need to leave the batter to stand, so make it when you're ready to cook the pudding. About 15 minutes before the beef is due to come out of the oven, increase the heat to gas mark 7, 425°F (220°C), add the dripping or veg oil to the roasting tin and place that on a baking sheet on a free shelf. After 15 minutes remove the tin, then place the tin over direct heat while you pour the batter into the sizzling hot fat. Return the tin to the baking sheet on the highest shelf .The pudding will take 25-30 minutes to rise and become crisp and golden.

Sweet Baked Apples

4 large Bramley cooking apples, de-cored and scored
110g/4oz soft brown sugar
4 tbsp mincemeat
1 tsp powdered cinnamon

Method
1. Preheat oven to 190C/375F/Gas 5.
2. Mix the brown sugar, mincemeat, together and spoon it into the cavities of the apples. Place the excess in the bottom of a buttered baking dish.
3. Place the apples on the fruit in the dish. Dot the top with butter and place in the oven for 45-60 minutes.
4. Serve piping hot with double cream or Custard.

Best I can do,
