Recipe for Brandy sauce Half oz Cornflour
Half Pint Milk
Half oz Butter
1 Level tablespoon Castor sugar
1-2 tablespoon of Brandy.

1 Mix cornflour to smooth paste with a little of the milk . 2 warm remainder pour on to paste and mix well.3 return to pan .4 cook stirring until sauce comes to the boil,and thickens. 5 simmer for 2 min remove from heat and stir in the sugar and brandy serves 4-6.

Alternative to xmas pudding , Recipe for Hot Chocolate Sauce for ice cream.
3 oz Castor Sugar
3 oz soft brown sugar
3 oz Cocoa powder
Half a pint of Milk
1 tsp Vanilla essence
1 put all ingredients into saucepan, stand over low heat 2 stir until sugar has dissolved slowly bring to the boil. 3 boil briskly without stirring for 2 mins (or until sauce coats back of spoon) serves 4-6

Potatoes Anna 1 1/2 Lb potatoes washed and peeled
3 oz Butter melted
salt and pepper
1 Slice potatoes very thinly.2 Dry well in clean tea towel 3 Brush 1 1/2 to 2 -pint pie dish with butter.fill with layers of potato slices arranged in overlapping circles.4 brush each layer thickly with butter ,sprinkle with salt and pepper.5 brush top layer with butter.6 cover dish with buttered aluminium foil 7 Bake in centre fairly hot oven 190c for one and a quarter hours.8 turn on to a warm heatproof plate ( potatoes should stay moulded in pie dish shape)9 Return to oven for further 20 to 30 mins (or until outside is golden brown) serves 4.
