Beef Wellington - cooked with flair (That means "Who cares about quantities?")
fillet of beef (any size you like)
brandy
mushrooms
onion
pate de foie gras
puff pastry sheets
little bit of butter
salt & freshly ground black pepper (of course!)
marinade beef in brandy about 2 hours
preheat oven to 180C
chop mushrooms & onions finely and saute together in a little butter
Place beef on pastry sheet spread top with pate and then with mushroom/onion mix.
Fold pastry to top and seal edges, making pretty wavy pattern with sealed edges. (Use a little milk to moisten surfaces of seal to make them stick)
Brush pastry with milk to glaze.
Bake on rack in 180C oven for about 30 mins per 500gms of meat.
(Need to cook on rack as otherwise the juices from the meat make the base of the pastry soggy.)
