THAI CASHEW SALAD

Ingredients:
1 tsp lime juice
1 tsp soy sauce 1 tsp
1 tbsp chopped chives
1 tsp rice wine vinegar
1 small carrot, shredded
Handful green beans, blanched, trimmed and sliced
¼ small white or red cabbage, finely shredded
1 shallot or a couple of spring onions, finely sliced
Handful watercress
4 tbsp cashew nuts, toasted
1tsp sesame seeds, toasted

Method:
Mix the dressing ingredients together with some seasoning, and loosen with 1 tsp water.
Toss the carrot, green beans, cabbage, shallot and the dressing in a bowl.
Just before serving add the watercress, roughly chop the cashews and add to the bowl.
Sprinkle with sesame seeds to serve.

A little fish sauce, garlic oil, chillies, sugar or pepper can be added to the dressing.

Red pepper, cucumber, coriander leaf or thai basil can be added to the mixed salad.

Shredded chicken, fried bacon, cooked fish can be added at the same time as the salad stuff.
