During her marriage with Francis Osbiston & Issac Watson, the dates of children being born coincide with each other, from each marriage. I don't understand why you think that this is what happened. As far as I can see after a brief look:
1) Ann Dodman (father John Dodman, labourer) married Francis Osbiston 08 Jun 1843
Francis seems to have accepted that he was the father of a baby born before the marriage (Francis Dodman Osbiston).

2) Mary Ann Dodman (father John Dodman, wheelwright) married Isaac Watson 06 Jan 1842

John Dodman is down as a publican here. One of the witnesses to Mary Ann marriage in 1842 was Louisa Dodman who is not with the family in 1841 (off being a servant) but her baptism is probably this one

with the list seeming to fit the 1841 census well

So given that you have Ann Dodman in 1841 in same household as her future husband, and Mary Ann Dodman at home with her own family in 1841 I don't see any reason to think bigamy was involved.
