all in one sponge cake

Just want some advice pls

did the delia smith one in a normal tin this afternoon
It turned out ok apart from it sunk in middle cos I opened the door whilst still rising

I used 2 baking powder tsps to 8oz Sr flour

is that too much baking powder?

do you have to have baking powder if using sr flour in an all in one sponge?

what should the temp be..........my oven is hot too hot on 170 for cakes burns them so I tend to do
150/160

so do I need baking powder :?

Perhaps a bit less BP?

Did you beat the mixture properly?
Here is a 4-egg mixture baked in two 20cm tins (I usually only use 3 eggs in these tins). Not my best effort but you can see it is not greasy, and I used butter and a silicone tin.
The other photo shows the mix after different amounts of beating. It starts off yellow but then the fat emulsifies and it looks more like mayonnaise. I beat this cake more than I usually do and it seems to me that it is drier on the outside. It has risen a bit too much in the oven, I used a different sort of baking powder to usual. I actually start by weighing the eggs because the ones here are any old size. This mixture was 240 g of plain flour/unsalted butter/eggs/sugar plus pinch salt, teaspoon vanilla extract, and three x 5ml baking powder.

Ok thanks ...I did get it to the mayo look

I think it sunk cos of opening the door but might be too much bp
i just doubled the recipe a la delia.

It tasted good though...........not greasy like in the silicone

I wondered if it was the oil in the orange zest I added to mix.

Can tell you don't do the baking - probably best to stick to the ironing Rob :wink: :wink:

Just had another slice of it with a cuppa tasted ok will deffo do it again
but keep the door closed for first 2o mins.

Got a super recipe for a fruit one so going to have a go at that soon.
