I get a big dish and cut up loads of leeks, layer them with cheese salt and pepper.Last layer as cheese on top. Then pour enough milk to cover. Bake in the oven at about 180 for about 1h 30m or until the leeks are soft and the cheese on top is a nice and crispy ,like cheese on toast. We have it at Christmas because my son in law loves it, but its nice at any time.

I have changed it now to leeks, but because you are cooking in milk ,you might have to turn the oven down ,otherwise (like a rice pudding) the milk can rise and overflow. I do cook the same recipe in potatoes ,which is also very nice. :-)

Orange sauce is for duck. I think the idea is that the orange being citrate takes away the grease from the goose.

Quite right Nl. My lot do not like xmas pudding . I do but its a waste to make one just for me. So I have to make home-made chocolate Scorce .I make them (my two daughters) buy the ice cream, I have in the past done my own in the freezer. :-)
