Sounds good to me NL.
Now the first step to making a white wine sauce is to select the wine. Not any old wine it has to be "drinkable" though it doesn't have to be dear and don't use cooking wines!!! You listening?!!!
A Riesling goes well with a spicy dish but i prefer Chardannay with chicken.
Here's what you do...and this is a secret recipe i pickled up on my travels through the Provence so don't mess about!!!
200ml of white wine
½ an onion, finely chopped
3 tablespoons of butter
A small handful of flour
1 teaspoon salt
A dash of cracked black pepper
1 small sprig of dry sage

Mix in a large pan over medium heat and simmer slowly. Once the ingredients are well mixed, add onion and allow it to caramelise. Once the onion begins to brown. Sprinkle cracked black pepper and dry sage over sauce and simmer for a few minutes .
There you go Chuck i'll be late tonight so keep the wine chilled please.

Nice one Rob!

I usually slice each chicken breast almost through and fill with a slice of cheese, then wrap in bacon - pop in the oven till cooked

That is the oddest way to make those ingredients into a sauce! Are you sure it didn't get lost in translation Rob?
Let me know how it goes NL.

Ok so I could use diced onion, garlic fried in olive oil to soften.
Then I could stir in the cream
or
I could use a bit of flour and then wine

then cook the chicken in oven with bacon and cheese a la Mally and serve with sce

I think that would work.
In the meantime I have a ready sauce on stand by.

Now what can I do with the potatoes any ideas?

My mouth's watering already!
I do it with pesto inside the chicken, my other half's not so keen on cheese - he doesn't notice it disguised as pesto!

I do that but we like a bit of blue in it.
The kids dont so I put spready or triangle cheese in. So tasty but rich.

Do you like pepper corn sauce?

If you do I make mine so easy too...
Pot of cream, crushed and whole peppercorns to your taste, oxo cube, dash of worcestershire sauce(if you want) a little white wine or brandy and just heat up.
Its lovely, well I think so
